A cashew’s appearance tells part of its processing story. Most retail cashews are pale, smooth, and almost uniform. Skin-on cashews preserve the thin natural testa, creating a more rustic appearance and a different sensory experience.
This dry-roasted product was manufactured in Ho Chi Minh City, Vietnam. Its ingredient list is remarkably short: cashews and salt. Behind that simplicity are decisions involving raw-material selection, shelling, roasting, cooling, seasoning, and packaging.
Vietnam as a processing centre
Vietnam is widely recognized as a leading processor and exporter of cashew kernels. However, “processed in Vietnam” does not necessarily mean that the raw cashews were grown there.
Vietnam’s processing capacity is larger than its domestic raw-material supply. Processors therefore handle both locally grown cashews and raw nuts imported from countries including Côte d’Ivoire and Cambodia. Dry roasting exposes quality
Dry roasting is an honest process because there is no added frying oil to carry flavour or soften textural imperfections. The cashew itself must perform.
As heat moves through the kernel, moisture is reduced and the internal structure becomes crisper. Browning reactions generate the warm, nutty aromas associated with roasting. Temperature and time must be controlled together: an aggressive roast may darken the testa before the centre develops properly, while insufficient roasting can leave the kernel soft, pale, or cereal-like.
The testa adds another variable. Because it darkens quickly, surface colour alone may not accurately indicate the condition of the kernel underneath. Roast development should be assessed through final moisture and water activity, internal and external colour, breaking texture, aroma intensity, kernel sweetness, bitterness, astringency, and storage stability.
When the ingredient list contains only cashews and salt, there is nowhere for poor raw material or an imprecise process to hide.
Cooling completes the roast
Cashews continue to carry heat after leaving the roaster. Slow or uneven cooling can extend roast development and create variation between batches. Product temperature should be reduced promptly and consistently before seasoning and packaging.
Cooling also affects shelf life. A warm product enclosed too early may create local condensation or retain more volatile heat, while unnecessary exposure after cooling increases the opportunity for moisture pickup and oxidation. The transition from roaster to seasoning and packaging should therefore be treated as one connected process.
Salt should clarify, not cover
Salt should sharpen the cashew’s natural sweetness and roasted character without becoming the dominant flavour. Its effectiveness depends on dosage, particle size, application temperature, surface condition, and distribution.
Skin-on cashews present a particular seasoning challenge because their surface is less uniform than that of a peeled kernel. Fine salt can provide better coverage, but excessive fines may collect at the bottom of the package. Larger crystals create visible seasoning and occasional flavour bursts but may adhere less consistently.
The strongest result is not necessarily the highest salt level. It is the lowest level that makes the cashew taste fuller and more complete.
